Ingredients
Per pasta:
400 g flour 00
4 eggs
20 g of coffee powder
For the sauce:
250 g of goat’s cheese
100 ml of milk
100 g of cream for cooking
75 g of hazelnuts
100 g butter to cream the dough
5 g di coffee powered
PREPARATION
HOW TO MAKE PASTA
Sift the flour with the coffee powder.
Form a fountain with flours and add eggs.
Knead for about 5 minutes until you get a homogeneous dough.
Wrap the dough in cling film and let it rest for an hour.
Spread the dough on a wooden cutting board and use the pasta machine to create the noodles.
HOW TO MAKE SAUCE
Break the goat cheese and put it in a saucepan with milk and cream.
Add salt and pepper to taste and stir until creamy and thick.
Finally:
Cook the noodles in salted boiling water.
Drain al dente and Saltale in a pan with butter and chopped hazelnuts.
Serve the tagliatelle hot and season with the goat cheese and hazelnut sauce. Bon appetit!
